The name “chai” is actually the Hindi word for “tea”, which was derived from “cha”, the Chinese word for “tea”. As you can imagine, Chai tea has a very long history and traditionally the chai spices mixed with black tea include cinnamon, star anise, cardamom, cloves, fennel, ginger and peppercorn. Recipes varied from household to household and region to region as they were passed on through the generations. This particular recipe does not have black tea but rather rooibos tea, hence taking it to a different level and making it caffeine-free. (Details for each herb are listed individually. Daily serving size: Add 1 tea bag to 8 oz of boiling water (212°F). Steep 4-5 minutes. Add 2 oz of hot milk (or dairy substitute), and sweeten with honey or sugar to taste.
